Our vinegar shelf is mostly about apple cider vinegar with the mother, the cloudy raw kind. We stock Bragg, Pyewacket's and other organic Australian brands. Hilbilby Cultured Food makes Fire Tonic, a fiery vinegar packed with garlic, chilli and horseradish that customers take by the shot glass in winter.
Wild Mother Tasmania does black cherry vincotto and fruity shrubs, and Spiral Foods brings mirin and coconut vinegar for Asian cooking. There are a few ready made salad dressings for busy weeknights too.
